So I don’t really have a name for this! LOL If anyone has a idea please let me know. I went off a very basic recipe and made my own recipe. It turned out really good I was kinda nervous.

Healthy Chicken Stew

Ingredients

1lb of chicken breast cut into small peices
one carton of sliced mushrooms (porta bella)
2 tbsp virgin olive oil
1/2 red onion chopped
couple handfulls of cherry tomatoes, halved
1 lemom zest
1 garlic clove, finely diced
3 large handfuls of torn spinach leaves
about 2/3 tsp sea salt
pinch of black pepper
Juice of one Lemon
1 zucchini sliced
2 table spoons of tomato paste (Organic if you can find it)
Crushed red pepper (optional and how much you use is up to how much you like heat)

Instructions

Heat evo in a large frying pan and saute mushrooms, tomatoes, onion, garlic,zucchini and salt and pepper.

At the same time start cooking your chicken in a different pan. (Add a little bit of evo first)

Add Lemon zest, Lemon juice, Red pepper, Spinach, and Tomato paste to veggies and let simmer

When chicken is done drain the chicken and then add to veggies and your done!

Chocolate Chunk Chocolate Cookies

1 cup almond flour

⅛ teaspoon salt

⅛ teaspoon baking soda

3 tablespoons melted coconut oil

1 tablespoon cocoa powder

2 tablespoons agave nectar (I used Pure Maple Syrup instead, You could use Honey also)

1 teaspoon vanilla extract

1 tablespoon almond milk

¼ cup chopped dark chocolate chunks

Directions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

Combine dry ingredients in a medium bowl. Whisk together wet ingredients in a small bowl. Add wet to dry and mix together.

Fill a tablespoon measure with batter and press down to form a half-circle. Tap batter out onto baking sheet and lightly press down in the center.

Bake for 10-11 minutes until bottoms just start to turn brown. Remove from oven and let cool 2-3 minutes before transferring to a wire rack. T

hey will be soft when removed from oven but firm up in a couple of minutes.

Happy Monday morning everyone! 🙂 We are on our final cruise countdown! In three days we drive to Orlando, and six day’s we get on our boat and sail away! How was y’alls weekend? Ours was good. We did our normal Saturday Crossfit and then our Sunday rest day. We walked over to trail we live close to and checked it out. We have been waiting for cooler weather and less bugs! Yesterday was perfect out! It is finally fall! I think. lol I also made some cookies (recipe is getting posted today)IMG_0180 and a chicken almost stew like dinner (also getting posted today)IMG_0202 and I worked pretty hard getting my ReebokOne account up and going so y’all can get 10 percent discount anytime you want to order from Reebok! 🙂 Now there are a few things excluded but for the most part most is included. And now on to today’s WOD. We only have 4 more days of crossfit and then our 2 week break starts! I’m kinda nervous about it! We are doing it on the cruise at St.Thomas and we want to check out a box in Orlando to but It’s still not going to be our normal training time. :/ So I guess we’ll see how it goes!

Today’s WOD was great! And to really top it off a few of us finished strong to the song “Roxanne”. My husband was glad no guys jumped in because that was his excuse for not doing it. It was a girl thing. lol.

Well I don’t know if I would go to that extreme but I really don’t know how to explain the feeling of doing something you couldn’t come close to doing a few months ago! It’s the best natural high! I did my first Toes2bar today! So far I’ve had to do knees to elbows every time toes2bar was in the WOD. I know its such a small thing I tackled but its a big deal to me. Now I can’t wait for the next workout with toes to bar in it! I still don’t know how many I’ll be able to do but at least I’ll be able to do a few!

Morning everyone! I’m excited about today’s WOD. Cleans and Double Unders! Of course take note that if you can not do 25 DUBS then you have to do 100 singles. They really want us to get our DUBS! lol. But we finally have our new ropes for this one and I’ve got some practice in so hopefully I can knock out a couple of rounds before switching to singles. Fingers Crossed! My husband and I are attempting to make a homemade pizza tonight, I’m pretty excited about that I hope it turns out good! And of course if it does I’ll share it with y’all!
