So these are my Paleo ( kinda ) Stuffed Peppers. I say Kinda because I added some smokey Gouda cheese at the end. Like I said before on here I don’t think my husband and I could ever do this way of eating 100%, but I did find that you will get 99% of the benefits of the Paleo Diet if you adhere to it 80% of the time. So I think that’s what we are going to give a try.

What You Need:

•Bell-Peppers, 4 medium-sized ( I did 2 red and 2 green and cut them in half to have more servings )
•Onion, 1 medium-sized
•Ground turkey, about 1 lb.
•One can of Diced Tomatoes
•a clove of Garlic ( or some already diced garlic, I did one small spoon full of it. )
•Extra Virgin Olive Oil ( I use light )
•Basil, Oregano, Sea Salt, Black Pepper, and Cumin
*Mushrooms are Optional

Directions:

1. Take 4 medium bell peppers, Cut them in half and clean the inside, and boil them in a pot for 5 min. or until the color is really vibrant
2. Chop a medium-sized onion and saute it for about 5 min. in 3 tbsp of olive oil or until translucent.
3. I added my mushrooms and garlic in with the onion with a little more evo and sauteed them until the mushrooms were cooked.
4. Brown your Ground Turkey in another pan until fully cooked.
5. To start making the filling, combine the ground beef, onion, and garlic mix in a big bowl, and add your diced tomato along with basil, oregano, sea salt, cumin, and pepper. Mix well.
6. Spoon the filling into the peppers, and then line them up in a baking dish with a small amount of water in the bottom.
7. I baked them for about 30 minutes ( Time can be different depending on your oven ) in a 350 degree oven. I took them out at 30 minutes and added some freshly graded smokey Gouda cheese and put back in for a extra 5 minutes just to melt the cheese.

They turned out great! 🙂
