Ingredients:

2 large sweet potato, chopped
2 red peppers
1/2 sweet onion chopped or 1 small one
2 large handful fresh organic spinach
1 tomato, finely chopped
1 1/2 tsp extra-virgin olive oil (or oil of choice)
2 garlic cloves, crushed
Salt & Pepper to taste

Directions:

In a skillet, sauté oil and garlic over medium heat for 1 minute

Add in chopped sweet potato and stir and sauté for about 7-10 minutes

Add peppers, onion, and tomato, Let sauté for about 10 minutes, stirring occasionally

Mix in chopped bacon (I pre cooked my bacon earlier in the day and broke it up so it was ready to go) If you dont precook let cook for 7-10 minutes

Mix in fresh spinach, and cook for 2-3 minutes, or until sautéed

Remove skillet from heat and serve hot

** I also added some over medium eggs on top and it made it perfect!!! **

These just came out of the oven have been tasted and husband approved! 🙂 The combination of lemon and blueberry together is amazing! I was skeptical when I first saw this because i’m not crazy about lemon in things that I bake but it complements the blueberry and gives it a fresh light taste. These are perfect to go with your morning coffee!

Ingredients

2 cups all purpose flour
1 ½ tsp baking powder
½ tsp salt
1 stick unsalted butter, room temperature
1 packed cup of Light brown sugar
2 eggs
2 cups blueberries (12 oz)
2 tsp lemon zest
½ cup plain Greek low fat yogurt

Directions

1. Preheat your oven to 350 degrees.

2. In a medium sized bowl, whisk together your flour, baking powder and salt. Add the blueberries and lemon zest and toss to combine.

3. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the yogurt then the dry ingredients, mixing only until incorporated and being careful not to crush the blueberries.

4. Scoop batter into muffin tin (It made about 18 for me but depends on how full you fill them) I also added some chopped fine walnuts to the top for a little crunch.

5. Bake for 30 Minutes (Again depends how hot your oven runs), Let cool (Or not! I tried mine while they were still warm and they tasted AMAZING!)

Okay first I want to send a shout out to http://ieatdrinkwod.com/ for this recipe! I’ve been on the hunt for a good Paleo pancake recipe and this one was GREAT! Now was it the perfect Paleo Pancake? I’m pretty new to Paleo so I can’t say for 100 percent that it is perfect but I can say I loved them and my husband loved them. I really couldn’t tell a difference in them so for me that’s what I’m always aiming for! Plus we paired ours up with some bacon pretty perfect pairing if you ask me. 😉 Now we still don’t do this way of eating 100 percent I would say maybe right now we do it 70 percent of the time. And I’m not sure 70 might even be pushing it. lol But we are trying to go get to 80 percent. (Thats the sweet spot you can still get all the benefits of it but you don’t have to do it 100 percent of the time) So we’ll see It might take us a minute to get there!

Question of the day- Do you do the Paleo lifestyle? If you do, do you do it 100 percent or less of the time, and finally how do you like it and how does your body feel after doing it for awhile?

Perfect Paleo Pancakes

Pancake Ingredients:
(serves 4 people)

1 Banana
6 eggs
1/2 cup coconut milk (NOT the kind in a carton for drinking, The kind in a can.
6 tbsp coconut flour
1 tsp vanilla extract
1/4 tsp baking soda
1/4 tsp baking powder
Pinch salt
1 cup of blueberries (Optional I love fruit in my pancakes!)
Butter or coconut oil for the pan

Cooking Instructions

1) Put banana, eggs, and coconut milk in a blender (I found it worked better than a food processor and added lots of air) and blend until totally smooth.
2) Add to the blender coconut flour, vanilla, baking soda, baking powder and salt. Blend until combined into a smooth batter.
3) Heat butter or coconut oil in a pan over medium heat.
4) Make pancakes about 3-4″ in diameter (seemed to work best). You will cook them for 2-3 min on each side but you have to be mindful since they wont form bubbles when they’re ready like regular pancakes do, but the sides will come in a bit when they’re good to go. If you can’t slide your spatula under it with ease, let it go another minute.
* Be careful when flipping. The batter will still be pretty wet so if you flip too aggressively, you wont get nice round pancakes. (She nailed this one when she says be careful b/c mine turned out horrible lol my husband took over and finished to cooking!)

Our box is starting a fundamentals class every Saturday before the normal saturday class and of course I’m going to go. This is basically the point of the class.

The focus of this class will be to teach, drill, and perfect the 9 fundamental movements of CrossFit in a safe and relaxed atmosphere. Although the class is designed for new athletes, the coaches encourage all current athletes to attend in an effort reinforce and perfect your technique.

The 9 fundamental CrossFit movements are:
1. Air Squat
2. Front Squat
3. Overhead Squat
4. Press
5. Push Press
6. Push Jerk
7. Deadlift
8. Sumo-Deadlift High-Pull
9. Medicine Ball Cleans

Now I’m pretty sure with how much the coaches help me that they would not be happy if I didn’t show up for this class so I’m going to take full advantage of it! Plus I really want to make everything perfect! I really want to compete and I really want to become an instructor next year! And yea maybe I don’t have to be able to do everything to be an instructor but I want to be able to do most stuff and do it right! And I really want it to look pretty! 😉 So today I will be at the gym from 830-11ish. Great way to kick off the weekend!!! Or at least that’s what I think! Okay on to today’s WOD- I’m going to try my hardest to get as many dumb dub’s as I can!!!! Cross your fingers for me!!! If not that’s going to be a lot of singles! 😦

Okay I have another good recipe for y’all to try! Not 100% healthy but not the worst either and super yummy. Today was our Sunday rest/family day we made some muffins, my husband cleaned our car and got it ready to take pictures of so we can try to sell it (very sad for us we love my Lexus but we need more room, Ugh being an adult and making decisions that make sense, no fun) and then we went to a pumpkin patch and corn maze. Over all pretty great day! Oh did I mention drank some yummy pumpkin beer! lol can’t leave that part out! Okay on to the recipe! If you try it out let me know how they turn out. 🙂 I hope y’all love them as much as us!

Brown Sugar Banana Nut Bread Recipe

INGREDIENTS:

1 cup Golden Brown Sugar
1/2 cup butter, softened
2 large egg
1 Tbsp vanilla extract
4 medium banana, mashed
3 tsp baking powder
1/2 tsp table salt
2 cups all-purpose flour
1/2 cup plus 2 Tbsp roasted & roughly chopped walnuts

Instructions

1. Spray 14 muffin tin cups with nonstick spray
2. Preheat oven to 350
3. Cream butter and sugar with a mixer until light and fluffy. Add eggs 1 at a time. Stir in vanilla and banana.
4. Stir in flour, baking powder and salt until combined. Fold in walnuts until combined.
5. Sprinkle the muffin tops with chopped walnuts.
6. Pour in pan, top with additional 2 Tbsp chopped walnuts and bake 1 hour or until a toothpick inserted comes out clean.
7. bake at 350 for 35 minutes or until golden and a toothpick inserted comes out clean.

A couple of tips for some extra yummy bread

FIRST ~ use BROWN sugar ~ it makes it caramel like and really takes the flavor to a whole new level.

SECOND ~ use A LOT of banana, but, don’t puree it, just mush it so you still have some chunky pieces

THIRD ~ use roughly chopped, not finely chopped walnuts that your roast for 3-4 minutes at 400 in the oven first. They will really stand out in your bread as big chunky roasted nutty pieces.

Now I have to show off our son because I’m pretty sure he is the cutest baby ever. lol. 🙂 I know I know every mom thinks that but, I’m pretty sure it’s true! 😀

Paleo Zucchini Brownies Ingredients

1½ cups grated zucchini
1 cup almond butter
1 tsp vanilla
1 egg
¼ cup organic honey
1 tsp baking soda
1 tsp cinnamon
½ tsp all spice
1 cup dark chocolate chips
2 Tbsp cocoa powder

Preheat oven to 350 degrees. Mix all ingredients in a large bowl. Pour mixture into a greased 9×9 baking dish. Bake for 35 minutes or until a toothpick comes out clean.
