Sweet Potato Paleo Breakfast Hash

Ingredients:

2 large sweet potato, chopped
2 red peppers
1/2 sweet onion chopped or 1 small one
2 large handful fresh organic spinach
1 tomato, finely chopped
1 1/2 tsp extra-virgin olive oil (or oil of choice)
2 garlic cloves, crushed
Salt & Pepper to taste

Directions:

In a skillet, sauté oil and garlic over medium heat for 1 minute

Add in chopped sweet potato and stir and sauté for about 7-10 minutes

Add peppers, onion, and tomato, Let sauté for about 10 minutes, stirring occasionally

Mix in chopped bacon (I pre cooked my bacon earlier in the day and broke it up so it was ready to go) If you dont precook let cook for 7-10 minutes

Mix in fresh spinach, and cook for 2-3 minutes, or until sautéed

Remove skillet from heat and serve hot

** I also added some over medium eggs on top and it made it perfect!!! **

      It is really good! Let me know how it turns out! 🙂 You can add stuff to like chicken sausage, Turkey and so on. I thought about that last night while we were eating it! (We had it for dinner!) Same with the seasonings I used salt and pepper but Crushed red pepper for some heat I bet would be really good!
